In 2005, after working with Léon Barral in the Languedoc, 4th generation winegrower Jonathan returned to his family estate, convinced that organic farming was the way to go. His father, however, was not easily convinced and gave him just 1.5ha to start. Jonathan then acquired an additional 1.5ha and converted all 3 to organic farming. A few years later, when his father saw how sought after his son’s cuvées became, he joined forces with Jonathan and allowed him to convert the remaining 17ha of the family vineyards to organic. It wasn’t long until Jonathan saw a dramatic improvement and felt that practicing biodynamics would be the natural next step.
Today, the domain comprises 20ha of certified organic (since 2006) and biodynamic (since 2016) vineyards on limestone and Kimmeridgian marl — all on hillsides, steep slopes, and terraces. Jonathan keeps the natural environment of brush, bushes, and trees surrounding the vineyards in order to maintain the natural balance and integrity of his surroundings. He plows in winter and spring. Everything is harvested by hand. The grapes are carefully hand-sorted, followed by a slow fermentation with indigenous yeasts at low temperatures for about 10 days. All cuvées are aged on the lees. Minimal SO2 is used.
The domaine was obligated to change the names of several of their cuvées in 2022 and proudly renamed two cuvées after their children, Elisa and Léon.
