After a defining period at Bollinger, 8th generation champagne grower Benoît Déhu returned to his family estate in 2009, fully dedicated to natural practices and the Meunier grape. His transition into organic and biodynamic farming began in 2015, with the 1.7ha single parcel of Meunier “La Rue des Noyers,” – which he uses as the base for his blanc de noirs, rosé, and red and white Côteaux Champenois bottlings. In 2016, he added a small single parcel of Pinot Noir, “L’Orme,” which is from massale-selected Pommard clones. 

Today, the domain comprises a total of 4ha – all certified organic and biodynamic. All of his bottlings are vinified and aged in barrel and foudre in an old grainery with added modern insulation in order to maintain perfect natural temperature and humidity. The majority of his barrels come from his family’s nearby oak forest, Meillery, mixed in with a few Burgundian ones. Benoît’s champagnes do not go through malolactic fermentation and are all zero dosage. He keeps a perpetual solera for his primary non-vintage cuvée “Initiation.”
